Friday night pizza :)

Supper was, again, later then normal. We've been having a lot of late suppers lately, which I'm perfectly happy with (reminds me of being in Europe or something :) I've been eating snacks later to compensate (usually around 3:30 or 4) and tide me over a little later. The almonds I had earlier kept me full and satisfied...I'm glad that I decided to grab a handful as a snack. :)

Pre-supper, I made myself a huge salad of mixed greens, tomatoes, cukes, mandarin oranges, and some balsamic vinaigrette dressing.

Pizza slice #1...
Pizza slice #2...I absolutely love a good homemade veggie pizza. Whenever I order out, they never pile on the veggies enough, and when I make my own, I can make it exactly how I want it. The crust is made with 1/2 wheat, 1/2 white flour, topped with parmesan, low-fat mozzarella, spinach, broccoli and onions. For fat/oils I used only olive oil...LOVE the flavor of extra-virgin olive oil! And, of course, the health benefits are a plus as well. :)

Any way you could post the recipe to this pizza? It looks great! (or point me in the right direction if it is already posted:) When I visited Europe I don't think I ever ate dinner be 10! So different but also fun. Enjoy your night and thanks for all the work you put into the blog!

Do you home make your own dressing? If not, do you have a brand that you recommend.

I tried plain yogurt after seeing it on your blog- with some honey. It was a lot better than I expected. Any yogurt recommendations (i used dannon)

Last q (sorry for so many), but how do you buy baby lettuce like that. I always get it in a bag, but would rather it buy it fresh. Thanks!

Hi, I just found your blog, I love it so far :)

Do you ever eat candies (the candies you suck on, such as life savers) or gum. I find if I am bored I can literally put a pack away and constantly want something in my mouth. Any suggestions?

Semi related to my previous question, but when I am studying I am typically so bored I think about my next meal, etc. How do you not think about food non-stop?

kate---I'd be happy to post the pizza recipe! :) Look for it along with the lunch post of today's, because I'll be posting it then. I need to figure out how to set up a separate section for recipes so I can post them all there. Hmm...

Rebecca--- I'll make my own dressing on occasion, but this one in particular was store bought. I love the Organic Seeds of Change line in health food sections of grocery stores (Greek Feta is a fave,) and I also like Ken's Olive Oil Vinaigrette and Lite Balsamic Vinagriette. For a spicy change on top of a chicken salad, try mixing some Lite Hidden Valley Ranch (about 1 T. per person) with salsa. How much you add depends on how spicy you want it...

For yogurt, I personally like stoneyfield farm. :) Topped with jam (or some honey like what you did! yum!), walnuts, and fruit, it makes for a great snack.

I buy the baby greens in a bag because it tends to last longer. There's a bag for $6.00 at my local store, and is made up of 3-16 oz. bags, so it's pretty affordable and last a long time. :)

Lindsey---I'm a huge gum addict as well! What I try to do in order to make sure I don't eat an entire pack a day, is to drink a lot of water. I know that sounds boring, but it helps when I mentally tell myself that I can have a peice of gum after guzzling a quart of water. That usually makes for one peice in the morning and one peice in the afternoon, AND keeps me well hydrated throughout the day. Its amazing what that does for energy levels...if water gets boring at all, try having the occasional crystal light packet (contains splenda though, so just b sure to limit it) and teas.

I also like bringing mixed veggies to munch on throughout the day, because it boosts my veggie intake while keeping my mouth happy. It takes a while to get used to not constantly chewing on gum, but it does get easier (I swear!)

How do I not think about food non-stop? Well, thinking about food has always been an enjoyment for me, but I also try not to get TOO obsessed with it. Sometimes I'll email a friend, or heat up a cup of tea and read a magazine for a short 15 minute school break. I also keep busy with other things (like shopping with my sister!) or planning coffee dates with people (um...that's kind of 'food-related, isn't it? ha)

I like planning breakfast and lunch at night so I have it all figured out the next day and I'm good-to-go. No thinking required for the next morning. :)

Food is fun to enjoy and plan, but there's a lot of other stuff to enjoy as well, so I try to break up my interests and avoid being obsessed. I tend to get overinvolved with whatever it is that I'm doing, so its a lesson I'm still in the process of learning...:)
