Celery Canoes, Veggies n' Sauce, and getting back into the swing of things!

Sorry for the mix-up!! You think I'd learn my lesson after the first time I tried closing temporarily, only to have the old address taken over, BUT...I didn't. So this is the new address (same as old, only with the number 505 at the end...) In an attempt to catch up with what was lost, I'll just start with this afternoon's snack...:)

I found out through hungrygirl.com, that it's national celery month! What better way to celebrate then with some celery canoes? :D I had two big stalks of celery with 1 T. peanut butter, and enjoyed every bite. I used to eat this all the time when I was small, except I never had it without raisins (I think it was due to the name of "ants on a log" that attracted me the most...haha.)

Tonight for supper, I wanted to actually try my whole idea of being in love with a good tomato sauce and how good it would taste over steamed veggies. So I steamed up a bunch of veggies (broccoli, carrot, and a HUGE handful of spinach which, of course, decreases greatly after being steamed), mixed in with a little bit of spaghetti, and topped with some homemade sauce and parmesan cheese. SOO delish!! :)

I'm off to get some homework done before the Bigges Loser!! :)

Seeing Blue

This morning came too fast! But somehow I was able to muster my way out of bed at the first alarm when I thought about having a big bowl of oats...haha...

I decided to use just 1/2 a banana in my oatmeal, and added 1 cup of blueberries for a change. I use the wild Wymann's Main blueberries (SO sweet), and dethaw a cup overnight. Its perfect over cold cereals too...

And of course, no oatmeal is complete without some sort of nut on top, so on went the walnuts.

Looks like a busy day today, so I better get started! :)

Back From the Bridal Shower...

I just came back from a beautiful bridal shower. I was happy to be sitting at the same table as one of my aunts, who is great at keeping conversation going and could make you laugh for hours on end. She always makes for a great time...:)

After coming back from church, I knew I wouldn't be eating until later since the shower started at 2, so I munched on 1/2 an odwalla snack-sized bar with an apple to help hold me over.

I brought my small camera with me, which explains the overly bright photo!! I had a chicken finger roll, some macaroni salad, lots of veggies, and some fruit salad...everything was delicious, and I liked having food that I could 'pick at' throughout the day...:)


I'm so happy that this weekend was so relaxing and refreshing, and I hope you all have had a great weekend as well!! :)

**Rather then adding an entirely new post, I figured I'd just add my supper and dessert to my lunch post! :)

Supper was kept simple (and warm!) with the last of the soup from yesterday, along with some kashi crackers. I'm so happy I'm on to a new box of kashis! The last type I bought was ranch, and as yummy as they are, you just don't have as many options of pairing them with things (ranch and peanut butter just don't mix! haha)


I was in the mood for something sweet afterwards, so I chose a peice of cranberry date bar from the shower. It hit the sweet spot for sure...so delicious when paired with a glass of milk! :)

I'm hoping to hit the gym tomorrow night, so we'll see what happens with that. It's supposed to rain on Tuesday, so I'd love to get a good run in around the weather...I think its time for me to overcome my 'gym-aphobic' ways...haha...;)

Trying a new brand of oatmeal...

Looks like an absolutely beautiful day outside!! The sun is shining, and it's in the...get this...the 30's!! Tomorrow it's supposed to even reach the 40's, and I can hardly wait...:)

For breakfast I tried a new brand of oatmeal by Arrowhead Farms (it's the 4 Grains Plus Flax kind.) I made it the regular way: 1 cup milk, 1 large banana, 1 handful of walnuts, and a little bit of peanut butter. It was pretty tasty and made for a bigger bowl then my typical oatmeal makes. I still like the 5-grain one the best though, only because it's creamier and doesn't have the "nuttines" from some of the tougher grains. But it did make for a nice change, and will definitely find its way into my "cycle of breakfasts." :D

Today I have a wedding shower to go to, so I probably won't be around until later tonight...I hope everyone is enjoying their weekend and feeling refreshed! :)

Workout Hunger!

Let's get right to the day's recap!! :)

8:00am---Breakfast!
10:00---Morning Snack (aka, banana sandwich! :)
12:00---Lunch
3:00---Me and my sister went out again today, since the roads were cleared up, and the sun finally popped its head out! We ended up both getting a skim latte with sugar-free mocha syrup (not pictured!) which I absolutely loved! I've been making sure that I go easy on caffeine lately, so I definitely appreciate lattes more now then I ever have. :)
5:00---Even though my sister and I had talked about going to the gym, it was still sort of a last minute decision. I had the option of eating before going or waiting till I came back. And I decided that I'd rather be slightly hungry then cramping up at the gym, so I grabbed 1/2 a snack-sized peanut crunch odwalla bar (also not pictured! I'm just "off" today!) for some energy, and had an amazing workout! I didn't know how to adjust the treadmill, and it was left on an incline the entire time. So even though I didn't do the same mileage as I do on the road, I felt like I got a great workout in and had so much fun while I was at it. I think my sister is finally succeeding in converting me into actually enjoying the gym! haha...I'm still much more a fan of running outdoors, but the gym made for a great change. :)
7:30---Today didn't follow my normal eating pattern, which left me feeling pretty hungry for supper, which ALSO means I wasn't patient in trying to snap a photo! haha...it made for an unphotogenic meal as I threw everything together, but it definitely hit the spot and was super tasty. The meat recipe (pork tenderloin, a very lean meat) is taken from a Light and Tasty magazine, and was super juicy and moist. I'm actually not much of a meat person, but I did really enjoy this...:) I had some potatoes, turnips, two little asparagus spears (my brother who's a vegetarian was home, which means the veggies were being spread out a little thin between the family members...haha), and a slice of Arnold's German Dark Wheat sandwich bread. Afterwards I snacked on an apple...



I didn't actually get a chance to get any homework done today, but I'm okay with that! After a busy week of studying and exams, it felt good to have a day where I didn't open up any school books. Tomorrow is back to normal, but for now I'm enjoying a little bit of a break...:)

Perfect Day for Soup...

Looks like a relaxing day for today...since I couldn't make it to the road race, I plan on fitting in some shopping if the roads can clear up this afternoon, and possibly going to the gym with my sister before supper. I've never been much of a fan of gyms, but it will be fun to have a workout with my sister for a change! :)

This morning I ate the other 1/2 of my breakfast banana with a T. peanut butter...

For lunch, soup seemed like the perfect choice on a snowy day. This minestrone soup was super easy to make, and super tasty (if you like cabbage, since it calls for 1/2 a head!) It hit the spot perfectly, especially with some kashi crackers on the side. :D

And, for dessert, I munched on some juicy red grapes...these guys are super sweet and cheap right now, so I'm taking advantage of buying them whenever I can. :)

I should get some homework done today before going out, so I think I'll get to that right now...:)

Snowed In on March 1st!

Looks like the race I was planning on volunteering at is going to be cancelled! Well, not the race itself, but the part of me volunteering there just isn't going to happen! It's a 1-1/2 hour drive away, and there's already about 7-8 inches of snow on the ground, and still piling up. At least we're in March, which means spring is on its way!! :D

For breakfast I had a wonderful bowl of hot cereal...1/2 cup of vanilla hempmilk, 1/2 cup of Ezekiel Flax cereal, 1/2 a banana, and the rest of my fruit cup on the side. Simply delicious! :)
