Getting it all done

Thankfully I finished some economics problems late this afternoon before supper, which means I can enjoy a good night of relaxation and read my new Shape magazine. I think it's going to be a little impossible to take tomorrow off completely from schoolwork, but it's mostly just reading assignments I need to catch up on, so I don't mind doing that. Especially with the snow we're expecting...paired with a cup of tea, maybe I can convince myself that it's actually enjoyable! ;)

For an afternoon snack, I brought along a banana and peanut butter. I ate this around 2 for an energy boost...

Supper was a plate of whole wheat pasta with my mom's chunky spaghetti sauce. I always pile on way more sauce then I need, but I love it so much...I could eat it on top of anything and everything...next time I'm going to try it on some steamed veggies. Yum...oh, and I also had a large mixed green and spinach salad on the side with some olive oil vinaigrette.


Okay...off to get some more homework done and figure out my schedule for the week. Scheduling out the week does wonders for keeping me on track with school. :)

Trying to be productive!

This morning flew right by. I was bad and didn't actually do any homework...I did, however, fit in a good 4 mile run which felt great...I'm officially energized for the day! :)

I'm actually heading out the door at this very moment...lots of shopping to do, and I'll be back later to (hopefully) get some homework done. I like to take Sundays completely off for a "recoop day," so we'll see if I can be productive enough to get it all done today!

For lunch, I made another pita sandwich. I stuffed it with 2 ham slices, a slice of swiss cheese (YUM), spinach, tomatoes, and some dijon mustard. On the side I had a carrot, some tomatoes, and whole grain goldfish.

Winter Blueberries

Blueberries in winter is one of the most wonderful treats. Especially when they're the 'wild blueberries'...tiny, sweet, and delicious. I bought a frozen bag of blueberries yesterday (sooo much cheaper for the current season, and just as nutritious), measured out a cup, placed in a bag, and let it dethaw in the fridge overnight.

I added them to my 2 cups of Heart to Heart with a cup of milk, and it was so deliciously yummy. The only thing missing was some almonds...:)

My 'internal alarm clock' won't let me sleep past 7. Unfourtanetly it doesn't know the difference between a Monday and a Saturday, but I guess I can't complain. I like early mornings, when nobody is up, and everything is perfectly calm and quiet. Not to mention, it means I can get in a good run and complete some homework early on so that I can enjoy the rest of the weekend worry free. :)

Busy School Day...Prep!

Goodness...I don't know which day is crazier. Thursdays or Fridays? I didn't get home until 7'ish tonight, and was SO happy I packed some good snacks to hold me over. It was nice to come home to a warm meal, and even nicer that my family actually waited to eat until I came home (either that, or supper took longer to make then they were expecting...hehe.)

Just a brief overview of everything that was eaten today. Everything is here, except for my dessert which I had after supper: a cup of hot chocolate (diet one...still need to get myself away from that stuff and start making more homemade...so much tastier and healthier!) and a godiva chocolate. YUM! It was a rasberry filled white chocolate starfish, and such a perfect ending to the day...:)

Breakfast: bowl of 5-grain oatmeal, 1 cup of milk, lots of cinnamon, small handful of walnuts, 1 banana, and 1 T. peanut butter...thanks Kath for the idea of using pb this way! I'm officially addicted...:D


Lunch, Layer One: There were multiple parts to my lunch, since I didn't actually have a break to eat. It's definately a "eat as you go" day...here I have a container of milk (doesn't need refrigeration!), cup of grapes, and an apple...
Lunch, Layer Two: I also had 1/2 a whole wheat pita with turkey, spinach and mustard, with carrot sticks and tomatoes for a snack, and a yogurt for an afternoon snack. I saved it for 3'ish, and it was the perfect hold-me-over.

Lastly, I saved my gnu bar for the ride home. So far this is my favorite flavor of the bars. It's very "oaty" and has a nice cinnamon flavor...

Nothing quite like a warm supper to enjoy after a busy day. Brown rice, a TON of veggies (so proud of my parents for cooking up this meal!) and tilapia which is hidden underneath everything. It was absolutely delicious...

Sorry for the very scattered post...MWF's are pretty insane with school, but I'll make an attempt to still get everything in, and hopefully make it look at least a little appetizing (which isn't easy when packing everything in a cooler!! :D)

A Grown-Up kid's meal...

Plates really do make a difference in the quantity you feel like you're eating. Take my supper for example. On this giant round plate, my supper looks like an appetizer. If I had used one of my salad plates instead, it would have ended up looking ten times larger. Funny how that works...

I'm glad I had that large strawberry shake this afternoon. It held me over really well for a late supper which didn't get on the table until 7'ish. Since Thursdays can get so crazy, we stuck to eating something simple and fast. Tonight's menu was a spinach and mixed greens salad on the side of some good ol' english muffin pizzas. These always remind me of when I was really small, because they were right up there with mac & cheese as my favorite food. :) Now I like to add a little bit of a grown-up spin on the old favorite, by adding onions, mushrooms and spinach as toppings. YUM!

I'm feeling really tired right now, and wishing I could have gone for a run (yucky weather!) Running really helps to energize me throughout the day. Hopefully the roads will clear up soon so I can get out at least one more time this week...in the meantime, I'll try to take this break as a good thing. I'm sure my legs could use the rest. :)

Off to do some more bio reading, and then hopefully I can catch some news or read a bit to relax before a very busy day tomorrow. I have chem lab and won't be back till late...

More then just a snack...

What was meant to be a light snack, turned into a mini-meal. I had some frozen strawberries that I didn't want to go bad, so I tossed them in the blender with a container of fat-free strawberry yogurt (stoneyfield), 1 cup of milk, and 1 T. sugar.

This could definately use some tweaking, in that I didn't really have enough fruit in there to make a "wow" flavor, but it was nice and thick and cold. And, not to mention, very filling. I'll be good to go through grocery shopping, which means less temptation to buy things I don't need! :)

Now I have to get back to work...

Soup and a Sandwich

Oh yes, the lovely Thursday has arrived. Also known as the day when there is absolutely nothing stocked in the fridge. I came pretty close to sticking to the typical 'me' by having a bowl of soup and some kashi crackers. But then I decided that my whole mantra of getting variety in your diet is...drum roll please...applicable to me as well!!

Besides, the more I thought about it, the more I realized I was craving tuna (you'll soon come to realize that I have weird and sporadic cravings...thankfully, they're usually healthy ones...teehee...) I stirred up some tuna with some diced tomato, onions, carrots, and some broccoli and a little bit of miracle whip light, and added some mixed greens to the top. I decided about half-way through my sandwich that some mustard might be good, so I ended up adding a little bit of dijon on the side later on...it was actually really good! It added a nice little kick to the sandwich...

A bowl of Amy's Organic Lentil Soup hit the spot as the perfect side to my sandwich. It was between that or some blue tortilla chips, but I decided on the soup since it fit the snowy, New Englandy weather. Perfect comfort. :)

Okay, I need to get back to work...biology is calling!
