Quick Dinner...

Supper came later then expected tonight, since there was a run-around with the family vehicles. My sister had a flat tire, which caused a mixture of driving people to and from different places. It was pretty crazy, and by the time we all got back in one place, there was a need for something quick and easy.

While working on some important homework, my mom made some homemade pancakes (just as quick as the box, and so much tastier!) for the family. The pancakes weren't whole grain (I actually prefer them with whole wheat flour, but wasn't about to complain considering my mom was nice enough to make them,) but it was decently nutritious, considering the rush we were in. I tossed some blueberries on them while they were cooking, and made a side salad with olive oil vinaigrette to help fill me up a little more.

Whew...hopefully things slow down pretty soon! I like staying busy, but it will be nice to have a little break this weekend for Presidents Day...:)

Lunch on the go!

Bio lab was only 1 1/2 hours today, which means I'm home early and relaxing a bit before prepping supper. I considered going for a run, but there's a wind chill factor of 2 degrees, and I just couldn't bring myself to go back out there. Tomorrow is supposed to be slightly warmer, so I'm definately going out in the morning, before we get any of the snow squalls that are expected...

So here's the rundown of the day so far:

5:30--breakfast
8:00--carrots and cauliflower for the ride there, plus a small coffee I picked up from a cute little cafe...I love it when I'm "too early" for classes. :)



11:00--I made a sandwich with Natures Promise whole wheat bread and the leftover grilled Cajun chicken from yesterday's salads. OH MY! It was so delicious and tender. Next time I'll be sure to take pictures of what it looked like inside (rather then just snapping the bag..ha...I was in a rush this morning!) I paired it with dijon mustard, tomatoes and mixed greens. On the side I had a Light N' Fit strawberry yogurt given to me by my sister who bought a bunch and didn't like them. I personally like stoneyfield the best, but wouldn't want these to go to waste, and they make for a yummy change. :)
12:00--pear slices

3:00--For the ride home, I packed a container of vanilla soymilk and an apple to beat the munchies. I wasn't even hungry (breakfast and lunch held me over so well!) but it was nice having something to chew on. Besides, now that 4 has rolled around, I'm starting to feel my stomach grumbling, and I'm glad that I had a little snack to tide me over.

Morning Energy

I got up at 5:30 this morning to read my bio lab, and I was actually surprisingly pretty wide awake. I typically get up at 6:30, so I was expecting to be sleepy, but this oatmeal purked me right up.

It's just a typical banana-nut bowl (1 cup of 1% milk, 1/2 cup 5-grain oats, lots of cinnamon, handful of walnuts, 1 banana mixed in before cooking, and 1 T. of peanut butter,) but it was enough to get me excited and out of bed. AND, it was filling enough to hold me the morning over, I'm sure. However, since I'm eating so early, I think I'll bring along a snack for mid-morning.

Lunch is going to be posted tonight since I have classes until 5:30 today! I'll see you all later for a lunch/supper post!

Study break

Night-time Study Snack...:) I decided last minute that I wanted something hot and comforting to keep me happy while doing chemistry. Hot cocoa always hits the spot...this one in particular is the Swiss Miss diet hot cocoa, but once the box is done, I swear to start making them homemade again. :)

Simple, but good...

Tonight I was feeling a little off...I hope I'm not coming down with something. I stuck to a simple supper of a whole wheat english muffin with pb&j and some yogurt on the side. It hit the spot, and it was quick and easy, which means I can get back to the grind!

Late Lunch...

Lunch was late today, but breakfast held me over suprisingly well! I also had a mid-morning snack of carrots and tomatoes to-go. A little strange to be eating veggies in the morning, maybe, but I tend to get the munchies around 10, and theres something appealing about carrots and tomatoes (think of a fresher and less saltier version of V8...hehe.)

Lunch was a huge salad of mixed greens, tomatoes, cucumbers, grilled Cajun chicken, mozzarella cheese, kidney beans (since we were out of black beans) and a dressing mix of salsa and low-fat ranch dressing. Definately my favorite salad mix...:)

On the side I had a slice of homemade rye and wheat bread. It was a little sweet (contains raisins and molasses) and was really yummy heated up in the microwave with a little bit of smart balance.

And lastly, I had a tasty apple. Cortlands are delicious from my grocery store right now...


Sorry for the late posting...I ended up visiting my grandparents and didn't get around to the computer until now. The rest of the day's plans are eating supper, homework (the never ending science assignments!!), and hopefully a little bit of relaxation as well. My mission this coming week is to not watch tv at night except for Tuesday (can't miss biggest loser!) I really want to get a lot of work done so I can have a more laid-back---and long, thanks to presidents day!---weekend. :)

Winter Wonderland

This is what I woke up to this morning. I looked out into my backyard and saw nothing but white. There really isn't a lot of snow, but just enough to make everything look like a winter wonderland. I think there's about 4 inches of fresh new snow, with more expected today (and the rest of the week as well!)


You would think that oatmeal would suit the weather better, but I'm on a role with the Kashi Heart to Heart cereal. :) I poured out 2 cups worth, topped with a banana and a glass of milk, and had a minneola on the side (think of a cross between a clementine and an orange, and that's what it taste like...pretty yummy! :)

Sunday mornings are busy, so I better get a move on...
